Bolted is, I think, a term that you don’t know truly until you planted a vegetable garden. I remember the first lettuce that bolted in a garden that I planted with my husband…he didn’t know the term (having not had a garden before) and thought I was making it up. I have to admit…to say “It bolted” in reference to a vegetable, can sound silly if you never heard it before. (I imagine rhubarb running away from the scene of a crime).
Marteen Kolk’s beautiful photography chronicles the garden and all it’s splendor. The gnarly carrots are my favorite (perfect grocery store carrots start to seem a whole lot less fun).
As his chronicled garden grew he proceeded from his conceptual line of approach and highlighted the unexpected hidden splendor of vegetables and the extraordinary colors and shapes they took on when they ‘Bolted’. This bound collection is available in a book called Bolted Doorgeschoten.
